As the days get warmer and flowers begin blossom, spring the perfect time to get outside and fire up the barbecue for the family. And if you're keen to elevate your barbecue game beyond the usual steaks and sausages, look no further.  

With Father’s Day just around the corner, we thought there could be no better time to share our finest spring seafood barbecue recipes with you. 

 

Flounder Char-grilled in Banana Leaves with Asian Flavours 

Normally, we would recommend avoiding cooking delicate fish species on the barbecue, but this recipe opens up a world of possibilities. Wrapping fish in banana leaves protects it from the high heat of the barbie, allowing it to gently steam in its own juices, rather than sear and fall apart. 

Top tip: If the fish is a long thin fillet, fold the edges under to make it more square - if the fillets are very small, use two of them in each parcel. 

 

Squid & Fennel Bruschetta 

This is the ultimate spring appetiser: zingy, crunchy and light.  

Two tips to avoid chewy, rubbery squid: wipe out the membrane inside the squid tube with a paper towel before you slice it up, and cook it quickly, on a roaring hot barbecue.  

 

Char-grilled Salmon Kebabs & Vegetables with Lime Mayo 

This is a great buffet dish served on a big platter for a barbecue or family gathering, like Father’s Day! 

The beauty of this recipe lies in its simplicity: it’s so easy that you could even sit back and let the kids prepare it! Of course, Dad’s assistance is a must for the grilling - we all know how much they love to supervise the barbie.  

 

Balsamic-Marinated Swordfish Steaks with Seared Vegetables 

This is such an easy dish to barbecue for a crowd, and it's so filling. The Swordfish can be put in the marinade several hours ahead of time, and any seasonal, Mediterranean-style vegetable would pair perfectly: think eggplant, capsicum and onion. 

 

Barbecued Lemongrass Rock Lobsters with Cucumber & Carrot Salad 

We’ve saved the best (and most adventurous) dish for last. This refreshing lemongrass Rock Lobster number is a taste sensation. 

Rock Lobsters, known as Spiny Lobsters in most parts of the world, are the Southern Hemisphere relatives of European and North American Lobsters. The main difference is that ‘true’ Northern Hemisphere lobsters have huge front claws or nippers, which Rock Lobsters don’t have; they’re just as delicious though!
