As we slip into spring, the weather is perfect for firing up the BBQ… Let Dad sit back and relax with a cold beer this Father's Day while you cook up a seafood feast (though you know he’ll be offering tips from the sidelines).
It’s surprisingly easy to whip up a restaurant-quality buffet spread on the BBQ – a bit of prep, then just fire up the coals and get grilling! Here are a few of our favourite BBQ recipes to inspire you.
Barbecued Coriander & Pepper Prawns
Recipe Here
This spicy dish is great as a quick snack, entrée or finger food cooked on an indoor char-grill or in a frying pan, or as part of a larger spread cooked on an outdoor barbie.
Balsamic-Marinated Swordfish Steaks with Seared Vegetables
Recipe Here
This is a perfect seafood alternative for red meat lovers, as Swordfish has a similarly meaty texture! The Swordfish can be put in the marinade several hours ahead of time, and any Mediterranean-style vegetable can be used, including eggplant, capsicum, and onion.
Char-Grilled Salmon Kebabs & Vegetables with Lime Mayo
Recipe Here
Everyone loves Atlantic Salmon, and these fun kebabs make a great buffet dish, served on a big platter. We recommend cooking the skewers for 30-60 seconds on each side, until the flesh is opaque almost all the way to the centre. Don’t cook them all the way through, as they’ll continue to cook after they are removed from the heat.
Barbecued Lemongrass Rock Lobsters with Cucumber & Carrot Salad
Recipe Here
Why not give Dad a real treat and barbecue up some Rock Lobsters? In this recipe, we cover them in an addictive, Asian-inspired lemongrass paste for a little extra kick.
