Not classically handsome, but very well named, Flathead are one of Australia’s favourite fish. There isn’t a stretch of Australian coastline that doesn’t hold at least one member of this family. From the shallow, estuarine Dusky, to the sinister deep-sea Armoured, there aren’t many dishes that can’t utilise a Flathead.
