They say there are three certainties in life: death, taxes, and the fact that everyone likes a Scallop.

Australia has two main species - the Saucer Scallop from Queensland, and the Commercial Scallop, found in the Bass Strait.

Although they have similar qualities, the Saucer Scallop is almost always available cleaned, in the half-shell, with the roe removed. Scallop connoisseurs tend to favour the Commercial Scallop, considering the roe to be an integral part of the Scallop experience.
