These seemingly alien life forms are actually a lot more familiar than you might think. Although widely popular throughout Asia and the Pacific Islands, each of these animals are equally at home in a French or Italian recipe.
They have firm, flavourful flesh, halfway between Squid and Mussels. They make for an excellent protein when used correctly - which is usually thinly sliced and tenderized, or cooked slowly to the point of tenderness.
