Amongst Australia’s sweetest family of fish, Whiting range in prestige from the King George Whiting, whose fillets can cost in excess of $60 per kilo, to the plucky School and Trumpeter Whitings, which can be as cheap as $5-$10/kg for whole fish.
Although the price varies greatly, quality does not, as all species of Whiting have a delicate, sweet, and lean flesh. Pair with light, simple flavours, so as to not overwhelm these special fish.
